Historic Cooking: Thanksgiving Pudding from 1925.

Hello again; here we are near the end of a year that has been absolutely abnormal!  Things have changed even more for me; I was laid off from my job at the school in mid-August, due to increased costs related to the Covid-19 pandemic, and have been unemployed since then.  As I have found whenever I need to look for a job, I am overqualified for all of the minimum-wage or entry-level jobs that people are hiring for (and there are fewer of those jobs available because of all the businesses that have closed), and under-qualified for everything else!  I may need to use this time to go to grad school and get either a Master's or a teaching credential, or both, but I have no idea how I will pay for it while unemployed! I have no illusions of anything improving under the new presidency, since my situation remained the same under all the previous ones. 

One good thing that has come out of this excess of spare time, is that I have immersed myself in historical research, as well as attending as many history-related webinars and online lectures as I can, and it has resulted in some new things (none of which will earn me any kind of income, but oh well).  I have continued with the YouTube channel that I started in July and August, and it has been really interesting, although I still hate editing the videos!  I have made some interesting connections with other historians in the U.S., and it has inspired me to keep going with my own research and costume and cooking projects.  I have a whole list of historic recipes that I would like to make into videos for the YouTube channel, and I am currently translating my beginning hand-sewing class -- which I taught to elementary school students a few years ago -- into a series of videos, too.  But the weather has grown cool, and all I want to do right now is bake, and drink tea!

Historic Cooking: Artichokes, Italian Style from 1898.

The Challenge: April 22-May 5: Flower Power. A dish that is floral, flowery, or flour-y, as you desire.

A month late in posting, but better late than never!  It took me a while to decide what to do for this challenge; I have orange-blossom honey, rose petal honey, dried rose petals, and both orange-flower and rose water in my pantry.  What to do?  I finally decided on artichokes – which are a flower! -- when I saw them in the grocery store, but then it took me another while to choose the historic recipe to use to cook them.  My first couple of artichokes had to be cooked and eaten in a not-particularly-historical-way when they were on the point of going bad, and I hadn’t yet chosen a recipe!  A week or so ago I bought some more artichokes and again, took more than a week to choose, not because there weren’t many recipes, but because there were so many choices! 

I selected a recipe from Encarnación Pinedo’s _El Cocinero Español_, which I have been slowly translating from the original 19th century Californian Spanish, because I’ve been wanting to try some of the recipes.  This recipe book is the earliest published cookbook from the colonial Spanish/Mexican California culture; I’m sure there are other recipe collections in existence, but as far as I know, they are still in manuscript form, hidden in attics and storage areas, and the California history scholars and museums that I contacted didn’t know about them.

_El Cocinero Español_ was published in San Jose in 1898, written by a lady from an influential Spanish ranch-owning family, who recorded the traditional Californio recipes that she learned at home, and at the Catholic convent school that she attended in the 1850s and 1860s (staffed by South American nuns).  At the time the book was written, the author, Doña Encarnación, was unmarried and lived with her sister, her Yankee brother-in-law, and their children, one of whom was already grown up and married to a Yankee.  The author and her sister were raised during a very difficult time in California history when the established community of Californios was being abused on all sides by American and English (and other foreign) immigrants and settlers, due to the misunderstanding, encouraged by the newspapers, that all land and property titles that existed before 1850 (California entered the United States), were legally null and void, and that all existing residents were reduced to the status of conquered enemies.  In reality, California was purchased (as part of the treaty that ended the war, because the residents had already started fighting for independence from Mexico), not conquered (it was the central government of Mexico that was conquered);  all property titles were upheld (but actually ended up being required to be confirmed in court), and all existing residents were automatically made citizens of the United States, but that is not how most people understood the situation!

In her introduction to the cookbook, which was initially written as a private family record of their history and food culture, Doña Encarnación records the animosity and distrust that her mother (her nieces’ grandmother) held for the foreigners, especially the Yankees, and attempted to pass on to herself and her sisters (including her nieces’ mother), and details some of the abuses that their family, in particular, suffered at the hands of the Yankees. The book was written in order to secure, to her nieces, their Californio family identity and history, in the form of the stories and recipes, which Doña Encarnación saw was not being taught alongside their American identity, and feared would be lost forever, as the girls would all, likely, marry American or other non-Californio men.  It is likely that the book was published because it fulfilled the same purpose for other mixed Californio/non-Hispanic families.

Since the Historical Food Fortnightly Challenge project officially ended, and no new challenges will be posted, those of us who have completed some of the challenges in the past decided that we would continue the project on an informal basis. We choose a challenge from the whole list of previous themes, and either complete them (if we never got a chance to do so), or re-do them, on our own time, with no requirement (even such an informal one as we had) to complete the recipe and post about it within a certain time period! I've been reading Edwardian Farm by Ruth Goodman, Peter Ginn, and Alex Langlands, so I've been thinking about life in California during the Edwardian period, and the similarities and differences between Edwardian California and Edwardian England.

Soft Gingerbread from _The Bride's Cook Book_, 1915.

 Since I've had this week off between Christmas and New Year's I've had a bit of time to do some baking.  There is construction going on in the kitchen, so I have to wait until the workers go home in the evening before I can clean up all the dust and grime, and cook anything; I've also been fighting a bad cold for over a week anyway, so I've been spending my time compiling historic Christmas-season recipes from all the files on my computer and the books on my shelves.  I haven't quite gone through them all, but some of the gingerbread recipes have begun to catch my eye.

I made the dough for some gingersnaps, and made 2 batches of gingerbread cake; one divided between small pans, to give as belated Christmas gifts to my family (when I see them), and the other in a loaf pan, for my housemates and I to eat at home. *I also have a plan to make some gluten-free cookies for my cousin and aunt when they come to visit, as well as a Twelfth Night or New Year's Cake, but more on that later*

Historical Sew Monthly -- Procrastination (how appropriate!): A pre-Gold Rush California day dress

The Challenge: Procrastination (January 2016), Out of Your Comfort Zone (June 2015), and Stashbusting (March 2015).  I didn't realize it until last month, but I neglected to publish the blog post in 2015 for the Out Of My Comfort Zone and Stashbusting Challenges, which were part of the original reason for this dress being made!  7 months is quite a procrastination, although I still don't consider this dress finished ...

California history, especially domestic history, has been a major passion and research topic for me for the past 15 years or so.  Part of my research has involved re-creating typical daily outfits for California women, from the early Spanish settlement period in the late 18th century, to the early 19th century Rancho period on the eve of the Gold Rush.  Unfortunately, comparatively little of the European, English, and North American fashion information from that time is widely applicable to California during the same period, due to the distance – both physical and cultural – between the people of California and those in the rest of the Western world before the Gold Rush.

Beginning in the 1760s, Spain established frontier settlements in California, but all contact with Spain ceased between 1810 and 1824 during the Mexican War for Independence; when the fighting ended, California's settlers benefited from the free trade that resulted.  Trade with England and the United States enabled the people, now calling themselves Californios, to enjoy many of the products and luxuries that had long been available to more settled parts of the former Spanish empire, with closer ties to Europe.  Even now, however, shipments did not usually include fashion magazines or any ready-made articles of women's attire, unless specifically mail-ordered.  Almost no non-Hispanic women arrived in California to influence the local fashions during this time.

Clothing the Californio, part 4 -- the Gold Rush era.

By the time California entered the United States in 1850, the social and political climate of the state was radically changing.  Hispanic immigrants from Mexico, Central and South America, entered California and headed to the gold mines, bringing their own culture with them.  Non-Hispanic immigrants to the state no longer acclimated themselves to California's previous culture, and they competed with the Californios for land, status, resources, and political clout.  Many Californio women married non-Hispanic men during this time period not only because the newcomers were different and exciting, but because to do so helped secure their property (an English-speaking man to manage their affairs as local law became much more English and American in influence) and social status.  During this time, Californio families began to identify themselves with Spanish European culture, in opposition to the non-Californio residents' characterization of all Hispanic people as Mexican and therefore "non-white", as well as to avoid association with the political and social unrest happening in the Republic of Mexico.  Californios began to wear the same styles and garments that other Americans wore, and look just as Victorian as someone from the East Coast during the same time period.

Clothing the Californio, part 3 -- the Mexican period.

After 1824, under Mexican law, the central government basically ignored California, but the Californios were given free trade and loosened domestic business regulations; when the Missions were secularized, some people received large grants of good Mission land from the government, and were able to become self-sufficient and even begin to accumulate wealth.  They used their wealth (in hides and tallow) to purchase manufactured goods that were brought to California on international trade ships every few weeks or so, on average, but most ranch owners didn't live in aristocratic style until much later.  Many of the Native people who had been part of the Mission system stayed on the land and became the servants of the wealthier ranch owners, but by the 1830s, this state of society was still really new and changing.  Americans, English, and other non-Hispanic immigrants began to arrive in small numbers at this time, and generally adopted Californio fashions, taking Spanish names and joining the Catholic Church, as well as becoming Mexican citizens, purchasing rancho land, or marrying into land-owning families and inheriting it.

Clothing the Californio, part 2 -- re-creating 18th century Spanish California costume

So, in analyzing the images of Spanish-era/18th century Californio women, these are the common clothing elements: white linen camisa (women's shirt/chemise) with medium-high neckline (no visible cleavage) edged with a gathered ruffle, with full elbow-length sleeves edged with a gathered ruffle that shows under the jacket sleeves; fitted wool or linen cuerpo or casaca (bodice or casaque/jacket), with medium-high round or square neckline (no visible cleavage), waist pointed at center front, stiffened with light boning and/or cording in front and at body seams, elbow-length sleeves with a slightly longer ruffle (compared to ruffle on camisa sleeves), hip-length peplum/skirt attached to the back and sides of bodice at waist edge, laced over a dark/contrasting stomacher, or laced or possibly hook/eye fastened closed edge-to-edge at center front; two (non-ruffled) ankle-length faldas, or petticoats, in solid colors (wealthier women are shown in cotton print petticoats), including red – often with white cotton or linen yoke from the waist to the hips and red wool or other color from there to the hem; black or white cotton or wool stockings and plain brown or black leather shoes with low heels; solid-colored, or white, or striped, cotton or linen rebozo (rectangular cloth veil or shawl), or lace mantilla (large rectangular or triangular veil worn by wealthier women) -- no cap, hat or bonnet -- covering the head, and wrapped around the shoulders and neck; hair braided and wound around the head (perhaps like 16th century Italian hair taping) under the rebozo or mantilla

Historical Food Fortnightly Challenge #20 -- Eggs a L'Exposition

What kind of food was served at the coronation of Queen Elizabeth? What did Benjamin Franklin eat at the Constitutional Convention? Find a food item that was served at a notable event in history, research the recipe, and recreate the dish.

This year is the 100th anniversary of one of the most iconic events in California history: the 1915 Panama-Pacific International Exposition.  Held in San Francisco's Golden Gate Park, the Pan-Pacific Exposition was California's message to the world that the city of San Francisco, and the entire state, had completely recovered from the catastrophic earthquake and fire in 1906, and that California had not only recovered, but surpassed its previous accomplishments to become a cultural, economic and technological leader of the United States, on a par with New York City, Boston, Chicago, and other eastern cities.  The fair lasted an entire year, and the city was transformed by the beautiful buildings, gardens, walkways, public art, and evening light shows, not to mention the exciting and wonderful international exhibitions in each of the pavilions.  The fairgrounds became the most fashionable place to be, and the fair was absorbed into San Francisco life and California culture to an extent that, when it came time to close the fair and remove all the buildings and gardens, Californians felt like the heart of the city was being destroyed.  Residents protested the removal of the buildings – which had been built of plaster and chicken wire over wooden frames, and never intended to last more than a year – and succeeded in saving the Palace of Fine Arts and the Temple of Art, which were kept in their original locations until several years ago when they needed to be re-created in concrete due to deterioration.  The re-created buildings are still there, part of an art museum complex, and are used for countless photographs and concerts to this day.

The fair was so popular that souvenirs of all kinds were created, from replica glass "jewels" to imitate those decorating the Tower of Jewels, to illustrated picture books – one of which I have! – to special "Exhibition" cookbooks.  I decided to make one of the recipes in the souvenir cookbook, The Pan-Pacific Cookbook: Savoury Tidbits from the World's Fare, which features international recipes as well as ones apparently created especially for the Exposition. This recipe is on the Pan-Pacific Exposition website. The book is available for free in PDF form on OpenLibrary, and available in paperback re-print for $13 or so on Amazon.

Historical Food Fortnightly Challenge: The Frugal Housewife, with Shrimp Curry from 1942.

The Challenge: # 9 The Frugal Housewife
Throughout history, housewives and housekeepers have kept a close eye on their budgets and found creative ways to pinch pennies while providing delicious and nutritious food. Create a dish that interprets one historically-documented method of frugal cooking.  

I chose to interpret frugality as a way to use pantry staples, including canned meat, to pull together an easy dish.  You could also use leftover fish from another meal in this recipe!

Found in my grandmother's cookbook, Burnt Toast Recipes: Victory Edition, published in Los Angeles in 1942, this recipe for Shrimp Curry takes advantage of pantry staples to make it economical as well as tasty.  The recipe book is a collection of recipes put together by the Women's Auxiliary to the Women's and Children's Hospital in Los Angeles, which took care of the wives and families of servicemen who were stationed in the area during WW2.  My grandmother worked as a candy striper at the hospital during the summers, taking the train out from Omaha, NE where she lived and taught school during the rest of the year.

California seemed to be lucky in comparison to other areas, because of our climate enabling food to be grown year-round, as well as the large number of dairies and poultry farms, and everyday residents who kept a cow and a few chickens around for butter, eggs and milk.  Fish were being caught and canned in Monterey throughout the War, and while much of it was sent to other parts of the U.S., and overseas to our armed forces and our allies, there was still quite a bit of food available, with or without food rationing.  This recipe is frugal in its use of butter and imported spices, and makes good use of canned fish.  Although it calls for shrimp, any canned fish can be used.  (Ignore the mushrooms in the photo above -- they were part of another recipe but mistakenly got into the photo for this dish.)  

Shrimp Curry
Sautè 1 small minced onion in 2 tablespoons butter until onion is soft but not brown.  Stir in 1 ½ teaspoons curry, 2 teaspoons flour and ½ teaspoon salt.  Simmer tightly covered for 20 minutes, then add 1 can shrimp (cleaned and shredded), 2 teaspoons lemon juice.  Simmer for 5 minutes and serve with browned rice.  – recipe from Alberta Austin.

Surprise: Antiques Roadshow!

Back in April I found out that the Antiques Roadshow was going to be at the Santa Clara Convention Center, which is less than 20 minutes from my house.  I missed them when they were in my home town a few years ago, because you have to put your name/e-mail address in a drawing on their website before a certain cut-off date, and then check the website after the deadline to see if you were chosen; I didn't find out about it until the date had already passed.  This time, though, I saw their ad after watching the show, put my e-mail address in, and actually got chosen for tickets!  The tickets are free, and each e-mail address chosen gets 2 tickets; each ticket holder gets to bring 2 items to be appraised.  I offered my second ticket to my friend Rose from the costume guild, and we had an exciting, if tiring day today at the Roadshow!

Catching up -- I'm so behind!

We've been keeping busy around here lately.  My grandma, who passed away last month, wanted to be buried in her hometown of Hibbing, Minnesota, up near the Canadian border with the U.S., and the weather has finally warmed up enough that they can have her interment.  So, several members of my family will be flying out to Minnesota next week and spending a few days there with the family for my grandma's second funeral and burial.  It will be a lot of flying and driving, and hopefully, a really good experience with the family, since it will also probably be the last time we go out to Minnesota, and maybe the last time we see those relatives in person ...

I may have mentioned my interest in the "Farm" history documentary series on the BBC, including "Tales from the Green Valley", "Victorian Farm," "Edwardian Farm" and "Wartime Farm" on this blog before ... my admiration of the featured historians and presenters knows no bounds!  I wish they would do a documentary here in the U.S. so I could work with them ... Anyway, there are companion books to each "Farm" series, and I recently won an autographed copy of the "Wartime Farm" book!

It's full, not only of an historical overview of what was going on in Britain between 1939 and 1950, but there are short chapters on many aspects of Home Front life in the country, with instructions for making and doing many of the things featured in the text and on camera in the documentary itself.

The first picnic of the season!

My tea guild will be visiting a newly-opened historic park this weekend for a picnic!  The Alviso Adobe in Milpitas was built during the 1830s, expanded in the 1850s with a wooden second story, and was a residence until the 1980s.  Almost all of its surrounding land was sold away within the last few years and historians were worried that the house, now hidden within a housing tract, would remain unaccessible, or worse, be torn down by the landowner to make room for more condos.  Thankfully, the oldest building in the city of Milpitas was not only allowed to stand, but the acre or so of its remaining land was recently transformed into a small park, and the outside of the building was restored!  We are going to have a Victorian picnic there and see what the park is like; hopefully the inside of the building will be restored and opened to the public as Milpitas' first history museum.

The menu I'm planning will include some or all of the following:

Smoked salmon
Cucumber sandwiches
Jam sandwiches or bread-and-butter
Cheese and crackers
Fresh berries
Pound cake
Fruit turnovers
Iced tea

2nd Annual San Francisco International Tea Festival

My friend and I went to the The San Francisco International Tea Festival at the Ferry Building Marketplace last Sunday.  A big highlight for me was meeting up with some of the members of the Afternoon Tea Across America e-mail group on Yahoo (see photo at left)!  We had a good time, and will probably go again next year.  The festival, open to tea lovers outside the professional tea trade, involved 16 tea vendors and various experts who offered samples of their tea and tea products, gave lectures and led tea tastings.  There were about 1,000 attendees, who received a small bag of promotional handouts, a few samples of tea, and an official tasting cup, at the festival entrance.

Mrs. Burnett's dress, part 2.

Wow, I hadn't realized how long it's been since I last posted!  I've been keeping busy, though, with historical things.  Researching Harriet Burnett's governor's ball dress (see photo at left) has been really interesting.  Unfortunately, I couldn't find any period description of the dress at the ball in any of the contemporary newspapers, because San Jose didn't have its own newspaper until 1851 and the ball was in 1849.  The nearest local papers were out of Monterey and San Francisco, and relied on the mail bringing news from San Jose in order to publish the Legislative happenings.  Unfortunately, the winter of 1849 was so rainy and stormy that the roads were unusably muddy and no news could get out of or into San Jose!  It took until the end of January 1850 for the rain to let up and the roads dry out enough that the mail could get through to Monterey and San Francisco, so by that time any excitement about the ball had died down, and the papers recorded the inauguration of Governor Burnett, and mentioned, almost as an aside, "there was a ball in San Jose." 

There was no further description or mention of the event itself, although an interview with someone who was there, done many years later, and published in 1941, has the woman recalling that the ball was "the" event for the Bay Area for years afterwards.  I think the only place where I could find a fuller description of the ball, would be in the letters or journal of someone (a woman) who was there, but I don't know of any journals or letters from 1849 in San Jose that have been published, or are available to the public!  I think I'm at a dead end in verifying the provenance of the dress, so I've just made a record for it in the museum database, saying that the dress "is said to have been worn" at the Inauguration Ball.  I'll have to leave it at that for now.  It's been really fun reading all those old newspapers, though.  I found a website, the California Digital Newspaper Collection, that has scanned the papers into digital form and made them readable (you can enlarge the printing from the teeny-tiny original size!).

Yay! New history research project!

O.k., I've been volunteering in the Collections Center at the history museum where I'm on staff (in a different department) off an on for the past few years (mostly during the summers), but steadily once a week for the past 6 months.  I'm assisting the Registrar in various tasks having to do with restoring, labeling, identifying, photographing, storing, and making records for various artifacts in the collection.  All very cool because I, as a part-time volunteer, get to work directly with the artifacts with very little supervision (the perks of working with a small museum that is underfunded and understaffed, and yet has a huge collection to maintain).  The Registrar knows of my interest in and experience with historic textiles and fashion history, so he's assigned me to work primarily with the textile items that need processing and care.  It's been really fun and interesting!

New costume plan: a sheer dress from the 1840s!

Well, I've settled on the 1840s as one of my favorite fashion eras, and now that I've made a nice wool gown from 1848-ish, I need a sheer gown for summer, right?  Of course.  My costume guild's upcoming Victorian Picnic in the garden of the Fallon House in San Jose gives me the perfect excuse reason to make what the Victorians called a "clear muslin gown".

While the main conflicts of the Civil War occurred far away from San Jose, California did participate in the fighting, with local skirmishes between Union and Confederate sympathizers.  California was split between North and South in its sympathies, with more Confederate sympathy in southern California, and more Union sympathy in the North.  Since the gold fields were in Northern California, the Union received large donations of California gold, which greatly supported the war effort.  California’s brand-new state legislature also sent multiple companies of men to serve in the Union army, most ending up replacing more experienced soldiers stationed at army forts in the Midwest, but several seeing action on the front lines by joining up with Massachusetts and other Northern states’ militias.  The conflict split the nation in more ways than one, and the scars from those wounds are still sore in some areas of the U.S.!
